ZOODLE SHRIMP PAD THAI (LOW CARB)

Macros: Per serving
Makes 5 servings

Ingredients:
20 oz. shrimp
500 g Zuchinni (spiral into noodles)
25g shredded carrots
25g green onion
100g peppers
4 oz. mushrooms
140 grams peanuts
5 grams sesame seeds
2tbls aminos Or soy sauce(I used coconut aminos)
2tbls rice vinegar
1 tsp garlic
1/2 tbls coconut flour
1/2 tsp ginger
1/2 tsp salt/pepper
Half lemon squeezed

How to make: 
Prepare zuchinni noodles and portion put into five containers. I don’t cook these so they don’t get soggy, will be perfect warmed up.
Cut up veggies and sauté with garlic and liquids. Add seasoning.
In separate pan sauté shrimp with lemon and salt and pepper.
Portion out veggies into 5 and add shrimp 4 oz per container(cook more protein if needed for goals).
Sauté peanuts and sesame seeds for 5 minutes on medium low heat with cooking oil spray.
Portion into 5. Top with green onion.
