Use a good portion of lean protein (I use about 1-1 ½ pounds to make about 4-6 3 oz portions).
Put in a crock pot for 6 hours or overnight, drain, shreds and add carnita season:
1 tablespoon black pepper
1 tablespoon kosher salt
1 tablespoon granulated garlic
1 tablespoon granulated onion
1 teaspoon ground Mexican oregano
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
I put mine on a bed of lettuce and top with homemade salsa and avocado for a fat source or rice for a carb source, also great on the cauliflower tortillas!
