1 head cauliflower
5 cups vegetable zoodles (I used butternut)
Peppers and onions
Garlic, pepper, salt
1 cup chicken broth
Soy sauce or liquid aminos
Chicken or choice of protein
Steam cauliflower and blend with chicken broth and 2 cloves garlic, salt and pepper using food processor.
Sauté zoodles and peppers and onions with 1tbls liquid aminos.
Baked chicken breasts.
Divide sautéed zoodles into 6 containers, add your amount of protein to each and divide cauliflower sauce over each. Top with Italian seasoning.
